The grapes are a unique waxy color ranging from yellow to green. The plant itself is highly floral in scent, almost to the point of perfume. Wine produced from Riesling, however, is very well-balanced with a dry, sweet, and sometimes sparkling character. It is considered one of the top three white wines together with
Chardonnay and Sauvignon Blanc.
Riesling's history goes back to the 15th century, where it was listed in the storage inventory of Count John IV. of Katzenelnbogen in Rüsselsheim. Hieronymus Bock later wrote of the vine variety in his work "Kreuterbuch". Riesling most famous claim to fame is its extremely long aging period. Bottles of Riesling has been cellared for as long as 100 years, then uncorked and enjoyed. More commonly, the aging period is between five and thirty years.
Riesling today is cultivated in France, Australia, New Zealand, Austria, United States, and even Canada. The grape is very delicate, and must be handled carefully at harvest to prevent crushing and bruising. Typically malolactic fermentation will be avoided, so as to preserve the crisp, tart character of the wine. In dining, it is a typical white wine favorite to pair with fish or pork, and also is one of the few that are a good match for Asian cuisine.
