The grapes are designated black, with a rich, deep, and dusty purple color. It produces a dense, dark, and highly tannic wine. Flavor characteristics of Cabernet Sauvignon include such quirks as a bell pepper taste in California regions, a taste of pepper, mint, or eucalyptus in medium climates, and a jammy taste in hotter regions. Cabernet Sauvignon grapes produce wines which are renowned for their ability to age very well in the bottle. Additionally, the wine produced from Cabernet Sauvignon grapes has a noted affinity for oak barrels, taking on the flavor of oak with such precision that using different species of oak trees for making the barrels produces a noticeable difference!
